After I tried the cashew and cream simmer sauce from the same makers [and loved it], I couldn't wait to try another of their preparations. So I again visited the local Wholefoods [made a trip just to get this item], and picked this one rather than the other preparations, because cilantro and coconut sounded so good! Now that I'm done making it [with chicken], I must say that it wasn't as great as I expected it to be. There are probably two reasons for this... one, my expectations for this were probably very high after I tried the cashew and cream; the second, probably more importantly, the taste of mint was all-pervasive [when I went back and looked at the ingredients, mint was mentioned somewhere towards the bottom of the list]. Since I'm not a huge fan of mint in my curries, I'm giving it a 4-star rating. Others may like this better than I did. As with my previous experience, I added lots of fresh ground pepper and some crushed red pepper to this sauce. Again, this came slightly cheaper at Wholefoods where it cost $5.99.
