(More customer reviews)I made a scratch coffee cake utilizing a mixture of this sugar with palm sugar from Thailand. The taste of the batter was incredible! Additionally, the crumb topping was a mixture of Big Tree's palm sugar with ginger root plus Billington's dark brown sugar, which has a deep and wonderful molasses flavor. My house church members who sampled this cake found it remarkable. They loved it, saying it was wonderful and rich. Beige/brown in its coloring make-up, the cake had a solid texture to it. The cake was made with goat butter and raw goat's milk, to boot, adding to its uniqueness. It will be one of my mainstay cake recipes and a cake to make and sell (if anybody's interested!!). I LOVE to make authentic cakes (which are always prayed over and blessed) using authentic ingredients, because mine are 'Cakes Like Grandma Made!'

(More customer reviews)This coconut sugar has become my sweetener of choice for several reasons.
PROS:
- low glycemic, so a good choice for the occasional treat if you are on a low carb diet.
- NOT full of fattening fructose like agave nectar.
- an all natural, whole food. Minimal processing; not an extract or isolated compound.
- full of vitamins, minerals, and amino acids - at least compared to the low or nonexistent levels in other sugars.
- no taste difference in the recipes I've made.
- granulated, so easier to use than the blocks of coconut sugar sold elsewhere, and easy to replace cup for cup in recipes using sugar (though it will be a little less sweet)
- comes in a resealable bag.
- shipping was fast and packaging adequate.
CONS:
- it does have a strong smell upon opening the bag - very "caramely" but it doesn't taste like caramel in finish products. Go figure. My sister likes the smell so probably just a personal preference.
- somewhat expensive if you are planning to use loads of it as a sugar replacement in a Standard American Diet. Used judiciously it should last a while.
A note on the Big Tree Farms brand:
"Coconut sugar" or "palm sugar" can be made from different types of palm but the Amazon product description does not specify and the label on the product image is too small. On the bag I received, however, it does specify "made from the nectar of coconut flowers" which is the kind tested and shown to have a low GI. The country of origin is listed as Indonesia.

(More customer reviews)Being a type II diabetic is challenging when it comes to desserts. Concerned that I was consuming too many products using artificial sweeteners and while researching some other products (allergic to stevia and agave), I came across the SweetTree Blonde evaporated palm sugar which claims a glycemic index of 35. My body has had positive gylcemic reactions to sesame and coconut products and I made the purchase on faith that the glycemic load using this sugar versus artificial sweeteners would be similar. I made a batch of cookies using Splenda and another batch using the SweetTree blonde sugar and then tested my blood glucose. I did this repeatedly over the course of about 7 days and was pleasantly surprised that my blood sugars in both cases were consistently within a few points of each other. So, for my body I found this sugar to be just as good a substitute as splenda. For my money, I would rather put something in me that is closer to nature. We use it now in our morning coffee and the company will be releasing a new liquid version of the product in the fall sometime.
