In Thai recipes as well as recipes throughout Southeast Asia, palm sugar is used as a natural sweetener. Our palm sugar is the best you can find anywhere, as we import from a premium producer in western Thailand, where the natural sap is collected from cut sugar palms and boiled until a nice sticky sugar remains. The natural sugar is poured directly into little cakes and packaged for easy use (see photos). It can be also eaten as candy. Consistency is firm but slightly soft, making it more simple to use than the inferior rock hard palm sugar some are selling. You get 8 small cakes, simply shave off what you need with a knife, and it dissolves nicely in the cooking process. Use with curries, gourmet dishes, sauces, and various desserts. (More customer reviews)I purchased with the idea to use in my stir fries and fried rice for vibrant flavoring, but I didn't realize it had the shell on them yet so I had to hand clean those tiny little shrimp to use as intended. They tasted OK, but more trouble than I anticipated for my needs.

Small, sun dried shrimps are used as in various Thai recipes, most notably Miang Kham, Pad Thai and Green Mango with Sweet Fish Sauce. Store in a cool dry place. For certain recipes, you should soak in hot water for 15 minutes before using. Approximately 400 small dried shrimp per 4 oz package. Ingredients: shrimp, salt, artificial color. Product of Taiwan.

(More customer reviews)Being a type II diabetic is challenging when it comes to desserts. Concerned that I was consuming too many products using artificial sweeteners and while researching some other products (allergic to stevia and agave), I came across the SweetTree Blonde evaporated palm sugar which claims a glycemic index of 35. My body has had positive gylcemic reactions to sesame and coconut products and I made the purchase on faith that the glycemic load using this sugar versus artificial sweeteners would be similar. I made a batch of cookies using Splenda and another batch using the SweetTree blonde sugar and then tested my blood glucose. I did this repeatedly over the course of about 7 days and was pleasantly surprised that my blood sugars in both cases were consistently within a few points of each other. So, for my body I found this sugar to be just as good a substitute as splenda. For my money, I would rather put something in me that is closer to nature. We use it now in our morning coffee and the company will be releasing a new liquid version of the product in the fall sometime.
